Ritu Bhalla, B.A.M.S., MTI, and Panchakarma specialist, with 25 years of experience introduces the art and science of Ayurveda (i-er-VAY-da) as she demonstrates how to prepare traditional Ayurvedic dishes. Ayurveda is ancient medicine from India and a sister science to yoga. The central theory of Ayurveda is balance. It is based upon an energetic system of healing that uses food, herbs, daily routine, body oils, and other therapies to manage the root cause of diseases.
Ayurvedic cooking is not strictly vegetarian or Indian cooking; it is the pharmacology of food. It honors the energetic properties of food to balance your individual constitution or dosha: Vata, Pitta, or Kapha.
